I love cakes! I also loving making them, especially if strawberries are involved, am I right? This months favourite recipe is Waitrose’s simple strawberry tarts with white chocolate. They’re super cute, easy to make and perfect for summer picnics, or just as a little sweet treat! They’re great for children and adults alike.
Serves 6. Prepare 20 minutes + cooling
⁃ 100g of your favourite white chocolate
⁃ 156g pack of Waitrose 6 Sweet Pastry Cases
⁃ 100g mascarpone
⁃ 200ml essential Waitrose Reduced Fat British Crème Fraîche
⁃ 1/2 tsp vanilla powder/essence
⁃ 400g essential Waitrose British Strawberries, hulled and halved
⁃ 2-3 tbsp strawberry jam
1.) break up the chocolate into a small heatproof bowl and melt over a pan of gently simmering water. Remove from the heat and cool to room temperature. Once cooled, brush the chocolate onto the inside of the pastry cases, leaving some for later, and leave to set.
2.) while that sets, beat the mascarpone, Crème Fraîche and vanilla until blended. Now you can beat in the remaining white chocolate and fill the pastry cases.
3.) Arrange the strawberries cut-side down on the filling. Gently heat the strawberry jam with 1tbsp water and brush over the strawberries. Leave to set and enjoy!
